Charcuterie is at the heart of 'The Flying Pig cureSmiths (FPcS).

At FPcS, we make artisanal slow-cured meats based on traditional recipes, specifically focussing on the Charcuterie of France, Italy, Poland and Spain. Our products are made with pork from pigs raised on family-owned sustainable farms.

OUR PORK

Good charcuterie is directly affected by the quality of the pork, and we go to great lengths to obtain the best pigs available. The pigs are humanely pasture-raised and are fed all-vegetarian feeds (antibiotic-free and never fed animal by-products).

CURED

We achieve the most gentle curing process possible, preserving the superior quality of our pork. The process begins by hand-rubbing the meat with carefully mixed spice blends. They are then cooled for a while to allow the salt and spices to penetrate. We carefully monitor temperature and humidity while curing.

Products are hung for drying, where they are closely monitored for appearance and taste in our bespoke curing rooms. Every product is individually lot-tracked so we can easily pinpoint farm origin and other characteristics.

PRODUCTS

Our product range includes dry-cured sausages (salami), such Saucisson Sec, Felino, Krakowska, Chorizo etc. We also produce a full range of whole cured meats, including Prosciutto, Coppa, Lonzo, Spalla etc. In addition, we’re excited to present our range of Italian-style cooking fats, including Pancetta and Guanciale, which are gaining a lot of popularity among chefs and are an essential ingredient in authentic Italian preparations.

Our passion for Charcuterie extends to fantastic locally sourced products and great quality coffee.  At our bespoke Charcuterie we had the space so we opened a small coffee shop/ deli.  The coffee shop/ deli showcases locally sourced products including the following:

  • Cheese - Udderly Delicious
  • Pomegranate Products - Darling Pomegranates
  • Artisan Bread - Rosemead Artisan Bakery
  • Mushroom Products - Darling Gourmet Mushrooms
  • Olive Products - Darling Olives
  • Olive Oils - Het Bos Olive Oil
  • Preserves - various local producers
  • Rusks and cookies - various local producers

We also have fantastic coffee sourced and roasted by local Langebaan Coffee Roaster, Justus du Toit from Wings Coffee Roasters.  We worked with Justus to come up with our own "The Flying Pig Blend" offering customers a lovely well balanced coffee that is neither too rich or too mild!

The coffee shop also has a small food menu, specialising in the cured products that are made on site, as well as locally sourced artisanal bread, leaves, cheese and other bits and bobs.

Open since September 2015, The Flying Pig Cafe has become knows as arguably the best spot for coffee in the Swartland and West Coast, and whilst our menu is very simple, we have been receiving fantastic reviews!

Dream Team!

In 2013, Gil & Aleks started Eighteen94 CureSmiths, which has now been renamed The Flying Pig cureSmiths. Gil kick-started the business at first, whilst Aleks was still head bookkeeper at a financial services company in Cape Town (she joined Flying Pig full time in 2015). Whilst Gil calls Aleks “THE BOSS”, they run FPcS together. Gil focuses primarily on the Charcuterie and meat sales, whilst Aleks is responsible for The Flying Pig Cafe & Deli, as well as the books.

Affectionately know as ‘Ronaldo’ at The Flying Pig, Ronald was effectively the first person to join Gil and Aleks. Ronald is a trainee charcutier and works closely with Gil. In the past year Ronald has gained exceptional knowledge and is an integral part of the team.

The Coffee Maestro – Robson joined us some time ago and we put him through a barista course. He now, arguably, makes the best flat whites this side of Cape Town! Constantly honing his skill, Robson, is passionate about being a barista – as passionate as we are about serving the best cup of coffee!

The Cubano Queen!, Yvette is the newest member of the team and is responsible for everything that comes out of The Flying Pig kitchen. She has learned very quickly and she has a keen attention for detail. She has literally perfected the art of the Cubano – but everything else she puts on a plate is fantastic!

Husband and wife team Gil and Aleks serve, among other delights like pies and burgers, an absolutely fabulous breakfast.
Gil is an accomplished charcutier, so there’s house-made pork sausage and bacon.

There’s also a wonderful deli section stocked with stuff you don’t see in every other deli, so it’s worth a turn to see what’s about. Visits to this part of the country always used to be disappointing for the enthusiastic foodie. However, with venues like this, run by cool people, passionate and knowledgeable about food in different forms, that is changing.

Their eclectic decor and simple, jumbled style has provided a venue that is very easy to relax in. A laid back place with the comforts of a good cappucino and fine local produce, you can accidentally hang around chatting here for hours.
As the service is run by the owners, it is warm, genuine and concerned.
